We are back in the United States after a 2.5 week long winter break in Hungary. We had a wonderful time, it is always amazing to go home and see family and friends, but winter break ended, school and work is about to start up so it was time to get back to the good old routine.
This time we came back 4 days early. Over the summer we made the mistake of taking our sweet – little time and we got back at 3 AM on a Monday and that same day I had to go to work at 7:30 AM. I was out of it for about a week, didn’t unpack for about two, laundry was piling up… it was a disaster.
The extra 4 days got us some time to get over our jet-lag , unpack, do laundry, do grocery shopping, and slowly get back to our normal. Another thing I was really excited to spend some time on was our living room. For Christmas we got some picture frames and matching colorful pillow cases. We also had a gift card we got from Ben’s aunt for our wedding to Pier 1 and we still haven’t used it.
The first day was pretty low key. We slept in, did grocery shopping, and picked up Echo. He had a fantastic break at my friend’s house. She has two other dogs and a beautiful backyard. She told me Echo bonded with all of her family and friends over the break and was loving all the attention he was getting.
After getting home we made some lunch. In Hungary we ate so much (which you MUST do when you are in Hungary, everything is so delicious) that we decided to take it a little easy in the upcoming weeks. Our new favorite food combo is lettuce, ground turkey and couscous. It is such a light and delicious meal.
Cooked the couscous in chicken broth and then cooked the ground turkey. Flavored it with salt, pepper, garlic powder and added both couscous and turkey to fresh lettuce along with some chopped up carrots. Instead of salad dressing we sprinkled olive oil all over it with some more salt and pepper.
After lunch I went to the gym. I did not work out when I was at home and felt a little bad about it. I did a 4 mile run/walk mix and then some weights. It felt great to work out again, I didn’t realize how much I missed it.
The next morning I was up around 6:30 AM. Echo and I went out to the living room, I made a cup of coffee and enjoyed the slow morning; I checked my messages, I did yoga, I talked to my family. I am starting to enjoy to wake up early. I love quiet and slow mornings, just sitting in the living room, getting ready for the day. When I wake up early I feel more productive throughout the day as well.
For breakfast I made Birch Benders paleo pancakes with chia seeds, blueberries and bananas. I don’t follow a paleo diet, I accidentally grabbed the package but oh my God it is so good!!!
We didn’t have any syrup so I added some plain yoghurt mixed with honey on top with fresh strawberries, almonds and cinnamon.
In the afternoon we took Echo on a long walk. The weather was so good, I loved every second of the walk. I am loving the fact that we don’t have much snow in town. I have nothing against the snow, don’t get me wrong. I love it on the mountains, it looks beautiful and people can go and ski and snowboard but I appreciate when life doesn’t get too complicated in town.
Echo was out for the rest of the day after his long walk. He loves laying down on pillows, this is pretty much his own giant pillow now, he loves cuddling with it.
At night we went to the movies. I have been so eager to see Passengers, I couldn’t wait any longer.
It got a little cold at night so I turned on the space heater. I love space heaters, heated blankets, love it when it is nice and cozy. Echo apparently feels the same way 🙂 Like mother, like son.
The next morning I woke up early again. I got some work done and felt super productive.
I made some tea and yoghurt for breakfast.
The yoghurt had apples, chia seeds, and blueberries in it. I use plain yoghurt and just mix in some honey to make it sweet.
In the afternoon we went to Target to print out some photos for the frames, stopped by Michael’s to grab some pillow stuffing for the pillow cases, and got a basket for our blankets in the living room from Pier 1.
Even though I would have loved spending extra 4 days with my family, I am happy we came back earlier. That was the smart choice. Our trip turned out to be 37 hours long and that really takes a hit on the body.
We have been eating lots of veggies and fruit since we came back and taking long walks with Echo.
