Hello Everyone, 

First of all I would like to say a huge thank you to my friends who have been helping with the blog and made the new look happen. I am beyond thankful for them and for the look that reflects the little crazy and silly that we represent.

But let’s go back to two weeks ago

It is crazy how fast the weather can change around here. Just when I think spring is around the corner…BAM…there is another snowstorm that hits us. Ugh. I have nothing against the snow except for the mornings when we have to dig the car out from it or drive in it. But I gotta say, it is really pretty.

Echo of course is the happiest camper every time it snows. He loves jumping in it, loves digging holes, and putting his head under it. He usually comes back inside with snow chunks hanging off of him and then slowly moves around on every couch while melting…of course

I love coming back inside and curl up on the couch with a warm drink, I have been on a green tea spree and trying to eat healthier snacks when I have my cravings so I made a hot cup of tea and pealed a grapefruit. I like to put some honey on the grapefruit when it is a little sour but this one was very sweet.

For dinner we made steak with quinoa and green beans and added some sauerkraut on the side because we are addicted.

The next morning I went to work out. I decided to start running…again. I have been struggling with running since I can remember. I have been trying to correct my breathing technique and start over. I feel like every time I make a progress, I get sick of it, quit and then I can start over. Right now I am not focusing on time, but more like setting out smaller goals for myself to run for, like 1-2-or 3 miles and just make it without stopping. It has not been easy, but I guess it is a start.

Another thing that motivates me to run is the rewarding smoothie afterwards. I put bananas, an apple, cinnamon, peanut butter and a SAMBAZON super fruit pack of performance protein.

In the afternoon I had a hair appointment. I have been playing with the idea of getting an ombre hair color but never really had the courage to do it. I made appointments before and then chickened out so this time I made the decision that no matter what I will do it. Worst case, I will just cut the bottom of my hair if it doesn’t work out. The whole process took 2.5 hrs (geez) My hair dresser was amazing and I really like the outcome but I don’t think I will do this again in the future…I think I like my original hair color more.

We spent the weekend in Sedona at my friend’s house dog sitting. We had a wonderful time hanging out with their dogs and enjoyed the fresh Sedona air.

At the beginning of the week I started working on my next blog post. I had a great time in Sedona and appreciated the quiet so much that it inspired me to change things up a little bit even when we are back home. I wanted to share how I felt without being so attached to social media and all that so I wrote up a list. I love taking notes on paper, making lists, drawing, it makes the whole process more fun for me. You can read more about outcome and the lessons I learned that weekend while being away from technology here.

Since we weren’t home for 4 days, we did not have many things in the fridge. But we had some things left and decided that we will finish up everything before we go on our next grocery trip. Probably not everything will go too well together but that doesn’t matter, it has to be finito!

I found iceberg lettuce, hummus, lunch meat, butternut squash and pancake mix. Plenty. Made the butternut squash in the oven (flavored it with honey), made the pancakes and made little iceberg lettuce “boats” out of the lettuce, hummus, and lunch meat. Turned out pretty good at the end.

For the pancake mix I used Birch Benders Paleo Pancake & Waffle Mix.We don’t eat by the paleo diet, to be honest I accidentally grabbed it in the grocery store but it is soooo goood. Very tasty, sweet enough and healthy too, so now I usually just go for it automatically.

Our next super meal included rice cakes, steamed carrots and cucumbers, baked cauliflower, lunch meat, grapes and almonds 😀 😀 😀 😀 😀 Soo goood haha

Our last meal was eggs and broccoli with rice and soy sauce and an additional steamed bell pepper. I don’t even have a photo of this one but it was fantastic and I mean it 🙂

Today we got done at work around 8 pm so knowing that at home all we had left was a packaged steamed baby beats and two apples we decided to grab dinner to go. We got a falafel salad and a chipotle burger to go.

This was our past two weeks. Pretty low-key and relaxed.

Echo is sleeping next to me, all tucked in, so I guess it is time for me to head to bed as well.
